Riofrío is a little-known part of Andalusia in a privileged location, in Poniente de Granada (a region officially recognised for its high-quality olive oil), within the municipal boundary of the town of Loja, west of Granada. This settlement has always been well-renowned as a traditional place to eat trout and sturgeon. For many decades, families from the surrounding area have come to this picturesque spot to enjoy the delicacies offered up by river fishing.

Riofrío’s star product is sturgeon caviar: the first certified organic caviar in the world. This is one of the most famous dishes in the gastronomy of Granada province, and Andalusia as a whole.Activities relating to this product range from visits to fish farms to tasting sessions

Fish farms aim to simulate rivers, in order to recreate the natural environment of the sturgeon and trout as closely as possible. Through the course of the visit, which lasts approximately an hour and a half, you’ll learn all about how the animals are cared for, as well as the history of these interesting fish.

The price also includes the provision of protective waders and the use of sophrology – a progressive relaxation technique – on the fish. During the visit, a female sturgeon is selected by hand for an ultrasound scan, with the entire process supervised and controlled by the technical staff.

In addition, you can discover the flavour of caviar in a tasting session. Under the branches of walnut trees, with the sturgeon pools in front of you and in the most comfortable dining conditions, discover the flavours of caviar at the very spot in which it is harvested. In this session, you’ll be able to taste the differences between organic caviar, traditional caviar and Russian-style caviar. All washed down with champagne and finished off with a complimentary sample of Paysunaya caviar.
